Here on the Olive Grove we’ve been lucky enough to grow our own pork and have it processed just down the road. This way we know exactly what’s been fed to our pigs and that they’ve been treated well, with love and respect and the animals have had a good life.
Low N Slow
Not that there’s anything wrong with pork from the supermarket, it just needs a little extra tic to bring out the beautiful flavours. Low n Slow is a good way to go. Sprinkle generously with salt and pop the joint into the oven the night before you plan on eating it and let it cook gently at around 105 C overnight. In the morning, take it out of the oven, wrap it in foil and put it back in the oven until about an hour before lunchtime. Save all the juices for the gravy!
